A deep, smoky, peppery dry rub and low-and-slow oven roast delivers tender beef ribs with a dark, crusty bark—no smoker required.
Step 1: Prep the ribs
Heat oven to **275°F / 135°C**. If your ribs have a thick membrane on the bone side, slide a butter knife under it, grab with a paper towel, and pull it off (better seasoning penetration and tenderness). Pat ribs **very dry** with paper towels.
Step 2: Make the smoky rub
Mix all rub ingredients thoroughly. Take a second to break up any brown sugar clumps so the rub coats evenly.
Step 3: Season for “all-day” flavor
Lightly coat ribs with **oil** (helps the rub stick). Sprinkle rub generously over all sides, pressing it in firmly. Rest **30 minutes** at room temp (or refrigerate up to **24 hours**, uncovered for a drier surface and better bark).
Step 4: Low-and-slow roast (covered)
Place ribs on a rack over a foil-lined tray (or directly on a tray). Cover tightly with foil. Roast **3 hours** for back ribs, **3.5–4 hours** for short ribs, until the meat has noticeably shrunk back from the bones and feels tender when you poke through the foil.
Step 5: Braise in foil for tenderness
Carefully open the foil (hot steam!). Pour in **beef broth/water, vinegar, Worcestershire, and honey** around the ribs (not over the top—keep the rub intact). Reseal tightly. Roast another **1.5–2 hours**, until a skewer slides in with little resistance and the ribs bend easily.
Step 6: Build a dark, smoky bark (uncovered)
Increase oven to **425°F / 220°C**. Uncover ribs and return to oven **15–25 minutes** until the surface is deeply browned and the edges are slightly crisp. Watch closely—sugar can go from perfect to burnt fast.
Step 7: Rest, then slice
Rest ribs **15 minutes** (juices settle; bark sets). Slice between bones. Serve as-is for maximum rub flavor, or spoon a little of the pan juices over the meat side only.
