Light, high-protein, veggie-loaded noodle salad with omega-3-rich shrimp, hydrating crunch, and a bright sesame dressing that keeps lunch energizing without feeling heavy.
Step 1: Make the dressing
In a jar or bowl, whisk/shake together sesame oil, soy sauce, lime juice (or rice vinegar), honey (if using), ginger, garlic, pepper, and chili flakes. Add 1 tbsp water to thin to a pourable consistency. Taste: it should be bright, savory, and nutty; add a splash more lime or water if it feels too intense.
Step 2: Cook noodles (and keep them springy)
Cook soba according to packet directions (usually 4–5 minutes). Drain, then rinse under cold water until completely cool (this stops cooking and removes excess starch). Shake well to drain thoroughly so the salad doesn’t get watery.
Step 3: Prep the vegetables
In a large bowl, combine cabbage, carrots, cucumber, scallions, and cilantro (if using). Add the cooled noodles and toss with clean hands or tongs to distribute evenly.
Step 4: Season the shrimp
Pat shrimp very dry (key for good browning). Toss with neutral oil, salt, and pepper.
Step 5: Grill or sear the shrimp
Heat a grill or skillet over high heat until very hot. Cook shrimp 1–2 minutes per side, just until opaque and lightly charred/golden at the edges (don’t overcook—pull them as soon as they curl into a “C” shape).
Step 6: Dress and assemble
Pour about 3/4 of the dressing over the noodle-veg mix and toss well. Add shrimp on top (or toss through). Drizzle remaining dressing as needed. Rest 5 minutes so flavors mingle, then serve.
