A hearty, high-fiber Indian-style chickpea and mixed vegetable curry simmered in a spiced tomato-onion masala, served with nutty brown rice for a filling, nutrient-dense dinner.
Step 1: Cook the brown rice
Add rinsed brown rice and 3 cups water to a pot with a pinch of salt. Bring to a boil, then cover and reduce to low. Cook until tender and the water is absorbed, **30–35 minutes**. Rest off heat **5 minutes**, then fluff with a fork.
Step 2: Build the masala base
Heat **1 tbsp oil** in a large deep pan or pot over medium heat. Add onion and cook until soft and light golden, **8–10 minutes** (this is where big flavor starts). Add garlic and ginger; cook until fragrant, **1 minute**.
Step 3: Toast the spices
Add cumin, coriander, turmeric, chili powder, black pepper, and **1/2 tsp salt**. Stir constantly for **30–45 seconds** until the spices smell warm and aromatic (don’t let them scorch).
Step 4: Cook out the tomato
Stir in tomato paste (or diced tomatoes). Cook, stirring, until it darkens slightly and looks thicker and glossy, **2–4 minutes**. This step removes raw tomato taste and deepens the curry.
Step 5: Simmer the curry
Add 2 cups water/stock and bring to a simmer, scraping up any flavorful bits on the bottom. Add chickpeas and mixed vegetables. Cover and simmer until vegetables are tender but not mushy, **12–15 minutes** (add a splash more water if it gets too thick).
Step 6: Finish with greens and garam masala
Stir in spinach and cook just until wilted, **1–2 minutes**. Add garam masala and lemon juice. Taste and adjust salt and heat. For a slightly richer mouthfeel without extra fat, simmer uncovered **2–3 minutes** to naturally thicken.
Step 7: Serve
Spoon brown rice into bowls and ladle over the chickpea-vegetable curry. Top with cilantro if using.
