Juicy, protein-rich chicken thighs baked until golden with fragrant garlic and rosemary, paired with crisp-tender green beans for a wholesome, veggie-forward dinner.
Step 1: Heat the oven & prep the pan
Preheat oven to **425°F (220°C)**. Line a sheet pan with foil or parchment for easy cleanup (optional), then set a rack on top if you have one (helps crisp skin). If no rack, just use the pan.
Step 2: Season the chicken (flavorful, not fussy)
Pat chicken thighs dry with paper towels (this is key for crisp skin). In a bowl, mix **1 1/2 tbsp olive oil**, **garlic**, **rosemary**, **salt**, **pepper**, **smoked paprika** (if using), and **lemon zest** (if using). Rub all over the thighs, concentrating some under/around the skin where possible without tearing it.
Step 3: Bake until juicy and golden
Arrange thighs skin-side up on the pan. Pour **water or broth** into the pan (not over the chicken) to prevent drippings from smoking/burning. Bake for **30–35 minutes**, or until the skin is **deep golden** and the thickest part reaches **175°F (80°C)** for best thigh tenderness (they’re forgiving and get juicier at this temp).
Step 4: Optional quick crisp finish
If you want extra-crispy skin, switch to **broil/grill on high** for **1–3 minutes** at the end. Watch closely—garlic can go from golden to burnt fast.
Step 5: Sauté the green beans (crisp-tender, bright)
When the chicken has ~10 minutes left, heat **1/2 tbsp olive oil** in a large skillet over **medium-high** heat. Add green beans and a pinch of salt and pepper. Sauté **4–6 minutes** until **bright green with light blistering**.
Step 6: Steam-finish for tenderness
Add **2 tbsp water** to the skillet and immediately cover with a lid. Steam **1–2 minutes** until crisp-tender (cook longer if you like softer beans). Uncover and let any water cook off.
Step 7: Finish with pan juices & lemon
Rest chicken **5 minutes** (keeps it juicy). Spoon a little of the garlicky pan juice over the chicken and green beans. Squeeze **lemon juice** over everything to brighten and balance the rosemary-garlic richness.
