A light-but-satisfying, fiber-rich lentil soup packed with vegetables and olive oil–friendly Mediterranean flavors, served with hearty whole grain toast to keep you energised through the afternoon.
Step 1: Sweat the veg (build flavor without heaviness)
Heat the olive oil in a medium pot over medium heat. Add onion, carrot, and celery with a pinch of salt. Cook, stirring occasionally, until the onion is soft and glossy, 6–8 minutes (don’t rush—this is where the sweetness develops).
Step 2: Bloom the spices
Add garlic, cumin, paprika, oregano, and chili flakes. Stir until fragrant, about 30–45 seconds. (If it starts to stick, splash in 1–2 tbsp water.)
Step 3: Simmer the soup
Add lentils, stock, diced tomatoes, tomato paste, bay leaf, salt, and pepper. Stir well to dissolve the tomato paste. Bring to a boil, then reduce to a lively simmer (small bubbles). Cook uncovered for 22–28 minutes, stirring once or twice, until lentils are tender but not mushy.
Step 4: Adjust texture (restaurant-style, still healthy)
For a thicker, creamier body without cream: scoop out about 1 1/2 cups of soup (lots of lentils and veg) and blend until smooth (immersion blender or countertop blender). Stir it back into the pot. (Skip this if you prefer a brothy soup.)
Step 5: Finish with greens + lemon
Turn off the heat. Stir in spinach until just wilted, 30–60 seconds. Add lemon zest and 2 tbsp lemon juice. Taste and add more lemon and/or salt as needed—lemon should make it taste brighter, not sour.
Step 6: Toast the bread
Toast whole grain bread until crisp and deeply golden at the edges. If you like, rub a cut garlic clove over the toast while warm (optional, but excellent).
Step 7: Serve
Ladle soup into bowls. Finish with black pepper and (optional) a tiny drizzle of extra virgin olive oil. Serve with whole grain toast on the side for dipping.
