Juicy grilled chicken and classic Caprese elements come together in a light, high-protein, veggie-forward Italian lunch finished with a glossy balsamic reduction—satisfying, nutrient-dense, and not heavy.
Step 1: Make a quick chicken marinade
Pat chicken dry. In a bowl, mix 2 tsp olive oil, garlic, oregano, 1/2 tsp salt, and plenty of black pepper (and a pinch of chili flakes if using). Rub all over chicken. Let sit while you prep everything else (5–10 minutes is enough for flavor).
Step 2: Reduce the balsamic
Pour balsamic vinegar into a small saucepan. Bring to a gentle boil over medium-high heat, then reduce to a lively simmer over medium. Simmer 8–12 minutes, stirring occasionally, until syrupy and reduced to about 3–4 tablespoons.
Step 3: Grill (or pan-sear) the chicken
Heat a grill pan, outdoor grill, or skillet over medium-high heat. Lightly oil the surface. Cook chicken 4–6 minutes per side (timing depends on thickness) until nicely browned and the thickest part reaches **165°F / 74°C**. Rest 5 minutes, then slice thinly across the grain.
Step 4: Assemble the Caprese base
On a platter or two plates, alternate tomato and mozzarella slices in a shingled pattern. Tuck basil leaves between slices. Season tomatoes and mozzarella with a pinch of salt and black pepper.
Step 5: Finish and serve
Arrange sliced chicken over or alongside the Caprese. Drizzle lightly with a touch of olive oil (start with 1 tsp total) and spoon balsamic reduction over everything to taste. Serve immediately.
