The full Australian-style pizza: smoky BBQ base, savoury beef and bacon, sweet pineapple, and a perfectly set egg on top.
Step 1: Heat the oven + prep the tray
Heat oven to **250°C (230°C fan)**. Put an **upside-down baking tray** or pizza stone in the oven to get ripping hot (this helps a crisp base).
Step 2: Cook the BBQ beef
Heat oil in a frying pan over **high heat**. Add beef mince, salt, pepper and paprika. Cook, breaking it up, until **browned with a few caramelised bits** and no pink remains, **5–7 minutes**. Stir in garlic (or garlic powder) for the last **30 seconds** until fragrant. Set aside.
Step 3: Crisp the bacon
In the same pan, cook chopped bacon over **medium-high** until **golden and starting to crisp**, **3–4 minutes**. Drain on paper towel (less grease = better pizza).
Step 4: Assemble
Place pizza base on baking paper (for easy transfer). Spread BBQ sauce right to the edges. Sprinkle on **half the mozzarella**, then add beef, bacon, pineapple and onion. Top with remaining cheese.
Step 5: Bake hot and fast
Slide pizza (on the baking paper) onto the preheated tray/stone. Bake **8–10 minutes** until the cheese is **bubbly with golden spots** and the base is crisp.
Step 6: Add eggs at the right time
Pull the pizza out and make **two small “nests”** in the toppings with a spoon. Crack an egg into each nest. Return to oven for **2–4 minutes** until whites are just set and yolks are still a bit wobbly (or bake longer if you like them firm).
Step 7: Finish + serve
Rest **1 minute** (helps the egg settle), slice and serve. Drizzle a little extra BBQ sauce if you like it “loaded”.
