An iconic Aussie party dessert with bouncy jewel-toned jellies, soft jam roll, silky custard, and layers of fresh berries in every spoonful.
Step 1: Make the jellies
Prepare each jelly in a separate jug according to packet directions. Pour into separate shallow containers (so they set faster and cut neatly). Refrigerate until fully set and wobbly, about 3–4 hours (or overnight).
Step 2: Whip the cream
In a cold bowl, whip the cold cream with sugar (if using), vanilla, and a tiny pinch of salt until soft peaks (pillowy, not stiff), 2–3 minutes. Refrigerate until needed.
Step 3: Slice the sponge and prep berries
Slice the jam roll into 1.5–2cm rounds. Slice strawberries; keep raspberries and blueberries whole.
Step 4: Cube the jellies
Once set, cut each jelly into 2cm cubes. (Tip: Run a knife under hot water, wipe dry, then cut for cleaner edges.)
Step 5: Layer 1: Sponge + berries
In a trifle bowl (about 2.5–3L capacity), arrange a layer of jam roll slices over the base and up the sides so it looks pretty through the glass. Scatter over a handful of strawberries and a few raspberries/blueberries.
Step 6: Layer 2: Custard
Spoon in about one-third of the custard and gently spread to cover. (Go slow so you don’t disturb the sponge.)
Step 7: Layer 3: Jelly
Add a layer of mixed jelly cubes, using both colours for that classic “stained glass” look.
Step 8: Repeat layers
Repeat: jam roll + berries, custard, jelly, until you’re near the top. Finish with a generous final layer of custard (so the top looks smooth and luscious).
Step 9: Top with cream
Dollop and swoosh the whipped cream over the top. For a simple finish, swirl with the back of a spoon into soft peaks.
Step 10: Chill to meld
Refrigerate at least 30–60 minutes before serving so the layers settle and slice/serve neatly.
