Flaky, golden tortilla pockets stuffed with seasoned beef and two kinds of melted cheese—pure comfort food that disappears fast.
Step 1: Preheat the oven
Heat oven to **375°F (190°C)** and set out a **glass baking dish**.
Step 2: Brown the beef and onion
Cook the **ground beef** and **diced onion** in a skillet over **medium heat** until the beef is fully browned. Drain excess grease if needed.
Step 3: Season and thicken the filling
Stir in the **taco seasoning** and **tomato sauce**. **Simmer for 5 minutes**, stirring, until slightly thickened. Remove from heat and let cool slightly (this helps prevent soggy tortillas).
Step 4: Square off the tortillas
Cut a straight strip off the **top and bottom rounded edges** of each tortilla to make a wide rectangle.
Step 5: Soften the tortillas
Stack the tortillas, wrap in a **slightly damp kitchen towel**, and **microwave 30–40 seconds** until warm and pliable.
Step 6: Fill with beef and mozzarella
Spoon the beef mixture into the center of each tortilla, leaving a clean border for sealing. Sprinkle **mozzarella** evenly over the beef.
Step 7: Fold and seal the pockets
Fold one long side over the filling. Brush the exposed edge lightly with **beaten egg**, then fold the opposite long side over and press gently to seal into a flat rectangular pocket.
Step 8: Arrange and top with cheddar
Place pockets in the baking dish, arranged snugly side-by-side for support (seam-side up as written, or seam-side down if you prefer). Sprinkle **cheddar** evenly over the tops.
Step 9: Bake until golden and bubbly
Bake **15–20 minutes**, until the tops are golden and the cheese is melted and bubbling.
Step 10: Rest and garnish
Rest **3–5 minutes** before serving, then garnish with **fresh parsley**.
