Step 1: Heat the BBQ
Preheat your BBQ to **medium-high** (aim for about **220°C** with the lid down). Set up **two zones** if you can: one hot side for searing and a cooler side for finishing.
Step 2: Season the chicken
Pat chicken dry with paper towel (this helps it crisp). In a bowl, mix **oil, garlic, oregano, paprika, cumin, salt, pepper, and lemon juice**. Rub all over the chicken, getting some under the skin if possible.
Step 3: Sear for colour
Place chicken **skin-side down** on the hot zone. Grill **5–7 minutes**, lid down, until the skin is **deep golden and lightly charred**. If it’s flaring, shift it a touch away from the hottest spot.
Step 4: Flip & finish gently
Flip chicken and move to the **cooler zone** (or lower heat to medium). Cook **10–12 minutes** with the lid down, turning once more if needed, until the thickest part hits **75°C** (or juices run clear, and the meat feels springy, not squishy).
Step 5: Rest & serve
Rest **5 minutes** (this keeps it juicy). Serve as-is, or slice and pile onto a platter with any resting juices spooned over.
