A pub-style-at-home winter classic with rich stout-braised beef, glossy gravy, and a golden cap of cheesy mashed potatoes.
Step 1: Brown the beef (pub-style flavor foundation)
Preheat oven to **200°C / 400°F** (180°C fan). Heat **1 tbsp oil** in a large deep skillet or Dutch oven over **high heat**. Add beef, **1 tsp salt** and pepper. Cook, breaking up, until you get real browning on the meat (not just grey), **8–10 minutes**. If your pan is crowded or watery, brown in 2 batches for better color. Transfer beef to a bowl.
Step 2: Sauté the veg
Reduce heat to **medium-high**. Add remaining **1 tbsp oil** (if needed), then onion, carrot, and celery. Cook until softened and lightly golden at the edges, **6–8 minutes**. Add garlic and cook until fragrant, **30 seconds**.
Step 3: Build the gravy
Stir in tomato paste and cook **1 minute** (this takes the raw edge off). Sprinkle in flour and stir continuously for **1 minute** to coat everything—this prevents a floury taste and thickens the sauce properly.
Step 4: Guinness braise
Pour in Guinness, stirring and scraping up the brown bits from the bottom (that’s your “pub” depth). Simmer **2 minutes**. Add beef stock, Worcestershire, thyme, bay leaves (if using), and the browned beef plus any juices. Bring to a simmer, then reduce to **medium-low** and cook uncovered until thick, glossy, and spoon-coating, **25–35 minutes**.
Step 5: Cook the potatoes
While the filling simmers, put potatoes in a large pot, cover with cold water, add a good pinch of salt. Bring to a boil, then cook until very tender (a knife slides through with no resistance), **15–18 minutes**. Drain well and return to the hot pot for **1 minute** to steam-dry (fluffier mash).
Step 6: Make cheesy mash
Mash potatoes until smooth (use a masher or ricer). Add butter and stir until melted. Add milk, cheddar, **1/2 tsp salt**, and pepper. Mix until creamy and scoopable (add a splash more milk if too stiff).
Step 7: Assemble
Stir peas (and parsley if using) into the beef filling. Remove bay leaves. Spoon filling into a **2.5–3 L (9x13-inch)** baking dish and level the top. Dollop mash over the surface, then spread to the edges to seal. Rough up the top with a fork for crispy ridges. Sprinkle a little extra cheddar if desired.
Step 8: Bake until golden
Bake **20–25 minutes** until the edges are bubbling and the top is golden. For extra “pub grill” finish, broil/grill on high for **2–4 minutes** to deepen color—watch closely.
Step 9: Rest and serve
Rest **10 minutes** (the gravy thickens and serving is cleaner). Serve hot—properly hearty.
