Shatteringly crisp on the outside and juicy-savory inside, these classic Vietnamese spring rolls are fried until deeply golden, then served hot for maximum crunch.
Step 1: Soften noodles & prep veg
Place glass noodles in a bowl and cover with hot water. Soak until pliable (about 8–10 minutes), then drain well and cut into 2–3 cm (1 inch) lengths with kitchen scissors (this helps rolling and prevents tangly filling). Squeeze cabbage lightly to remove excess moisture.
Step 2: Make the filling
In a large bowl, combine ground pork, softened noodles, carrot, cabbage, onion, garlic, eggs, fish sauce, sugar, and black pepper. Mix vigorously with your hand or a spoon until it looks slightly “paste-like” and cohesive (about 1 minute). This helps the filling bind so the rolls slice cleanly and cook evenly.
Step 3: Set up your rolling station
Mix cornstarch and water to make a thin slurry. Set out rice paper wrappers, a clean damp towel (to cover wrappers and finished rolls), and a tray lined with parchment or lightly oiled.
Step 4: Wrap (the rice paper method for extra crisp)
Fill a wide bowl with warm water. Dip **one** rice paper wrapper in and out quickly (about 1–2 seconds). It should still feel a bit firm—don’t fully soften it or it will tear. Lay it flat on your work surface and wait 15–20 seconds until it becomes pliable.
Step 5: Fill & roll tightly
Place about 2 heaped tablespoons of filling near the bottom third, shaping it into a short log. Fold the bottom up and over the filling, fold in the sides snugly, then roll up firmly into a tight cylinder. Brush a little cornstarch slurry on the final edge to seal. Keep finished rolls under the damp towel so they don’t dry out and crack.
Step 6: First fry (cook through)
Heat 4–5 cm (1 1/2–2 inches) of oil in a heavy pot to **160°C / 320°F**. Fry in batches (don’t crowd) for **6–7 minutes**, turning occasionally, until light golden and cooked through. Remove to a rack to drain.
Step 7: Second fry (make it shatter-crisp)
Increase oil to **190°C / 375°F**. Return rolls in batches and fry **1–2 minutes** until deep golden and audibly crisp. Drain on a rack (not paper towels, which can trap steam and soften them). Rest 2 minutes, then serve hot.
