Golden, flaky sausage rolls packed with cheeseburger flavour—juicy beef, melty cheddar, pickles, and a tangy “special sauce” for dunking.
Step 1: Heat the oven + prep trays
Preheat oven to **425°F / 220°C (200°C fan)**. Line 2 baking trays with parchment. Keep puff pastry chilled (it handles best when cold).
Step 2: Make the cheeseburger filling
In a bowl, combine **ground beef, onion, garlic, Worcestershire, mustard, salt, pepper, and paprika**. Mix with your hands just until combined (don’t overwork or it gets tight). Fold in **cheddar** and **chopped pickles**.
Step 3: Shape the logs
Cut each pastry sheet in half to make **4 long rectangles**. Divide filling into **4 portions** and roll each into a log the length of the pastry piece. Place one log down the center of each rectangle.
Step 4: Seal like sausage rolls
Brush one long edge with **egg wash**, then roll pastry over the filling to enclose. Press seam to seal, then place seam-side down. Trim ends neatly.
Step 5: Slice + score
Cut each long roll into **3 pieces** (you’ll have **12 rolls**). Lightly score the tops with 2–3 small slashes (helps steam escape and looks sharp on camera).
Step 6: Egg wash + “burger bun” top
Brush tops with egg wash. Sprinkle with **sesame seeds** if using.
Step 7: Bake until deeply golden
Bake **22–27 minutes**, swapping trays halfway, until the pastry is **puffed and deep golden brown** and you see **juices bubbling** at the seams. Rest **5 minutes** (filling sets, cheese stays gooey).
Step 8: Stir up the special sauce
Mix **mayo, ketchup, mustard, pickles, 1 tbsp pickle brine, onion powder, paprika, and pepper**. Add a touch more brine if you want it more “dunkable.”
Step 9: Serve social-style
Pile onto a board, add a bowl of special sauce, and serve hot-warm. They’re at peak greatness in the first **20 minutes**.
