Step 1: Prep asparagus (for sauce)
Cut asparagus tips off (top ~5–6 cm / 2 in) and set aside. Slice the remaining stalks thinly (coin-shaped). This gives you tender pieces throughout the sauce plus pretty tips on top.
Step 2: Pound chicken thin
Place a cutlet between baking paper/plastic wrap and pound to an even 5–7 mm (about 1/4 in). Even thickness = even cooking and max crispiness. Season both sides with salt, pepper, and paprika.
Step 3: Set up the breading line
Put flour in a shallow bowl. In a second bowl, whisk eggs with Dijon (if using) until smooth. Put panko in a third bowl.
Step 4: Crumb the schnitzels
Dredge chicken in flour (shake off excess), dip in egg (let excess drip), then press firmly into panko to fully coat. Lay on a rack/plate. (If you have 5 minutes, let them sit—crumb adheres better.)
Step 5: Start the asparagus cream sauce
In a saucepan over medium heat, melt 1 tbsp butter. Add garlic and stir until fragrant, 30 seconds. Sprinkle in 1 tbsp flour and cook, stirring, 1 minute (it should look like wet sand, not browned).
Step 6: Thicken, then add asparagus
Slowly whisk in stock until smooth. Simmer 2 minutes to thicken slightly, then stir in cream. Add sliced asparagus stalks (not tips yet). Simmer gently 4–5 minutes until asparagus is tender and the sauce is silky enough to coat a spoon. Add lemon juice (if using). Season to taste with salt and pepper. Keep warm on low.
Step 7: Cook seasonal vegetables
Heat olive oil (or butter) in a large skillet over medium-high. Add vegetables with a pinch of salt and sauté until crisp-tender and bright, 4–7 minutes depending on what you’re using. Pepper to taste. Remove to a warm plate.
Step 8: Fry schnitzel until golden
Heat neutral oil + 2 tbsp butter in a large pan over medium-high heat. You want a lively sizzle when crumbs hit the oil. Fry 1–2 schnitzels at a time, 2–3 minutes per side, until deep golden and cooked through (internal temp 74°C/165°F). Add a touch more oil between batches if the pan looks dry. Drain briefly on a rack or paper towel and sprinkle with a pinch of salt.
Step 9: Finish sauce with asparagus tips
Stir asparagus tips into the warm sauce and cook 1–2 minutes until just tender (still bright green).
Step 10: Serve
Plate schnitzel, spoon asparagus cream sauce over (or alongside to preserve crunch), and add the seasonal vegetables. Serve immediately while the schnitzel is audibly crisp.
