Smoky, tomato-chipotle shredded chicken piled into warm tortillas with crisp onion and lime — a classic Mexican staple that tastes like it came from a taquería.
Step 1: Sear the chicken
Heat oil in a large skillet or pot over medium-high heat. Season chicken with salt and pepper. Sear 2–3 minutes per side until lightly golden (it won’t cook through). Transfer to a plate.
Step 2: Cook the onion base
In the same pan, reduce heat to medium. Add sliced onion and cook 6–8 minutes, stirring often, until soft and just starting to caramelize at the edges. Add garlic and cook until fragrant, about 30 seconds.
Step 3: Build the tinga sauce
Stir in crushed tomatoes, chipotle peppers + adobo sauce, oregano, cumin, and salt. Bring to a gentle simmer, scraping up any browned bits from the pan (that’s flavor).
Step 4: Simmer until shreddable
Nestle chicken back into the sauce. Cover and simmer on low for 20–25 minutes (thighs) or 15–20 minutes (breast), until the chicken is very tender and pulls apart easily.
Step 5: Shred & reduce
Remove chicken and shred with two forks. Return to the sauce and simmer uncovered 5–10 minutes until the sauce clings to the chicken (you’re looking for “jammy” and thick, not soupy). Taste and adjust salt; add more chipotle if you want more heat.
Step 6: Warm tortillas
Warm tortillas in a dry skillet over medium heat for ~20–30 seconds per side until pliable with a few toasted spots. Keep wrapped in a clean towel.
Step 7: Assemble tacos
Pile chicken tinga into tortillas. Top as you like and finish with a good squeeze of lime.
