A family-sized, deeply savoury beef-and-veg pie with rich, glossy gravy and a crisp, flaky puff pastry lid.
Step 1: Season & flour the beef
Pat beef dry (this helps browning). Toss with 1 1/2 tsp salt, pepper, and flour until every piece is lightly coated.
Step 2: Brown the beef (flavour foundation)
Heat oil in a large heavy pot over high heat. Brown beef in 2–3 batches (don’t crowd), about 5–7 minutes per batch, turning until deep brown crust forms. Transfer to a bowl.
Step 3: Sweat the veg
Reduce heat to medium. Add onions (add a touch more oil if needed) and cook 5 minutes until softened and golden at the edges. Add carrots and celery; cook 3 minutes. Stir in garlic for 30 seconds until fragrant.
Step 4: Build the gravy
Add tomato paste and cook 1 minute (it should darken slightly). Add thyme and bay leaves. Pour in beef stock, water, and Worcestershire, scraping the pot bottom to dissolve all the browned bits (that’s flavour).
Step 5: Braise until fork-tender
Return beef (and any juices) to the pot. Bring to a simmer, then cover with lid slightly ajar and cook on low for 1 hour 30 minutes, stirring every 20–30 minutes to prevent sticking.
Step 6: Thicken to “pie filling” consistency
Remove lid, simmer 15–25 minutes to reduce until the gravy is thick and glossy. It should mound slightly when spooned (if it’s soupy, your pastry will go soggy). Stir in peas if using. Cool 20–30 minutes (warm is fine; piping hot isn’t).
Step 7: Assemble
Heat oven to **200°C / 390°F (180°C fan)**. Spoon filling into a deep pie dish (about 24–26 cm / 9.5–10.5"). Lay puff pastry over the top, trim edges, then press to seal (use a fork or pinch). Cut 2–3 small slits in the centre for steam.
Step 8: Bake until deeply golden
Brush pastry with egg wash. Bake **30–35 minutes** until puffed and deep golden brown. Rest **10 minutes** before serving so the filling settles.
