Chewy, toasty coconut mounds with crisp edges, finished with a glossy dip of dark chocolate for the perfect sweet-bitter balance.
Step 1: Prep the oven & tray
Preheat oven to **325°F / 165°C**. Line a large baking sheet with parchment paper.
Step 2: Mix the coconut base
In a large bowl, combine **shredded coconut**, **sweetened condensed milk**, **vanilla**, and **salt**. Stir until evenly moistened and thick.
Step 3: Whip the egg whites
In a clean bowl, beat **egg whites** until they hold **soft peaks** (foamy at first, then turning opaque and slightly billowy; about **2–3 minutes** by hand whisk or **1–2 minutes** with a mixer).
Step 4: Fold to lighten
Gently fold the whipped whites into the coconut mixture until no streaks remain. The mixture should feel lighter and slightly aerated, but still scoopable.
Step 5: Shape
Scoop heaped tablespoons (about **30–35g** each) onto the tray. Lightly press into **compact mounds** so they hold together (don’t smash flat).
Step 6: Bake until golden
Bake for **16–20 minutes**, rotating the tray at the halfway point, until the macaroons are **deep golden on the edges** and **lightly golden on top**.
Step 7: Cool completely
Cool on the tray for **10 minutes**, then transfer to a rack (or parchment) and cool completely, **about 20–30 minutes**. (Chocolate won’t stick well to warm macaroons.)
Step 8: Melt the dark chocolate
Place **chopped dark chocolate** (and **1 tsp oil**, if using) in a heatproof bowl. Microwave in **20-second bursts**, stirring well each time, until smooth and glossy. (Or melt over a barely simmering water bath.)
Step 9: Dip & set
Dip the bottoms of each macaroon into chocolate (or dip halfway for a dramatic look), letting excess drip back into the bowl. Place on parchment.
