Step 1: Cut and soak the fries
Scrub potatoes (leave skin on for the classic look). Cut into fries about 1/4-inch thick (try to keep them even). Rinse under cold water until the water runs less cloudy, then soak in a bowl of cold water 15–20 minutes (this helps remove surface starch for better crisping). Drain and pat *very* dry with towels.
Step 2: First fry (cook through, not brown)
Heat frying oil in a heavy pot to **300°F (150°C)**. Fry potatoes in 2–3 batches (don’t crowd) for **5–7 minutes** until pale, softened, and just beginning to turn a light blond. They should not be deeply colored yet. Remove to a rack or paper towels.
Step 3: Rest the fries

Step 4: Toast the buns
Split buns and toast cut-sides down in a dry skillet (or with a tiny smear of butter/oil) over medium heat for **1–2 minutes** until lightly golden. Set aside.
Step 5: Form thin patties
Divide beef into **8 balls** (4 oz / 113g each). Keep them loosely packed—don’t overwork. Season the outside of each ball generously with **salt and pepper** right before cooking.
Step 6: Smash and sear
