Tender, seared beef cubes tossed in a bright lemon-butter garlic pan sauce and finished with a cool, creamy garlic ranch-style drizzle.
Step 1: Season the beef
Toss the beef cubes with salt, black pepper, and paprika until evenly coated.
Step 2: Sear the beef
Heat the olive oil in a large skillet over high heat. Add the beef in a single layer and sear until browned on all sides, about 4–6 minutes total (work in batches if needed to avoid crowding).
Step 3: Sauté the garlic in butter
Reduce heat to medium. Add the butter and minced garlic to the skillet and sauté until fragrant, about 30–60 seconds.
Step 4: Finish the lemon-butter sauce
Add 2 tbsp lemon juice and stir, scraping up any browned bits. Toss the beef to coat and cook 1–2 minutes more, until the cubes are glossy and the garlic is mellowed.
Step 5: Mix the creamy garlic ranch sauce
Stir together the sour cream, mayonnaise, garlic powder, remaining 1 tbsp lemon juice, and chopped parsley in a small bowl until smooth.
Step 6: Plate and sauce
Spoon the beef (and any pan sauce) onto plates and drizzle generously with the creamy garlic ranch sauce. Serve hot.
