Juicy chicken meatballs simmered in a silky leek-and-winter-mushroom cream sauce for a cosy, weeknight-friendly dinner.
Step 1: Mix the meatballs
In a bowl, combine ground chicken, panko, egg, salt, pepper, Dijon (if using), and thyme. Mix just until combined (overmixing makes meatballs dense). Let sit 5 minutes so the breadcrumbs hydrate.
Step 2: Roll
With damp hands, roll into 14–16 meatballs (about golf-ball size). Set on a plate.
Step 3: Brown the meatballs
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add meatballs and cook, turning to brown all over, about 5–7 minutes total. They don’t need to be cooked through yet—just nicely golden. Transfer to a plate.
Step 4: Sauté leeks until sweet
Reduce heat to medium. Add butter to the same skillet. Add sliced leeks with a pinch of salt and cook, stirring often, until softened and lightly golden at the edges, about 5–6 minutes. (If they catch, splash in a tablespoon of water.)
Step 5: Cook the mushrooms hard for colour
Add mushrooms and cook 6–8 minutes, stirring occasionally, until they release their liquid and then start to brown. You’re looking for deep golden patches and a concentrated, savoury smell.
Step 6: Add garlic + bloom flavour
Stir in garlic and nutmeg (if using) and cook until fragrant, about 30 seconds.
Step 7: Build the creamy sauce
Sprinkle flour over the mushrooms and leeks, stirring constantly for 1 minute to cook out the raw flour taste. Pour in wine (or stock) and scrape up the browned bits from the base of the pan. Simmer 1–2 minutes until slightly reduced.
Step 8: Simmer the meatballs in sauce
Add chicken stock and bring to a gentle simmer. Return meatballs (and any juices) to the pan. Cover and simmer gently for 8–10 minutes, or until meatballs are cooked through (165°F / 74°C internal, or cut one open—no pink).
Step 9: Finish with cream
Reduce heat to low. Stir in heavy cream and simmer 2–3 minutes until the sauce is silky and lightly thickened. Taste and adjust with salt, pepper, and lemon juice for brightness.
Step 10: Serve
Sprinkle with parsley. Spoon meatballs and sauce over mashed potatoes, buttered noodles, rice, or crusty bread for dunking.
