Golden, crunchy tortilla stuffed with gooey cheese and sweet-savoury onion—classic comfort you can eat with your hands.
Step 1: Soften the onion
Heat a small non-stick skillet over medium heat. Add oil, then onion with a pinch of salt. Cook, stirring, until softened and lightly golden at the edges, 3–4 minutes (you want it sweet, not burnt). Add cumin/paprika if using and stir for 10 seconds until fragrant.
Step 2: Assemble
Lay the tortilla flat. Sprinkle half the cheese over one half of the tortilla, scatter the warm onions over, then top with the remaining cheese (cheese on both sides helps it “glue” together). Fold into a half-moon and press lightly.
Step 3: Toast until crisp & melty
Return the skillet to medium heat. Cook the quesadilla 2–3 minutes until the underside is deep golden and crisp. Flip carefully (use a wide spatula) and cook the other side 2–3 minutes until golden and the cheese is fully melted. If it’s browning too fast, reduce heat to medium-low.
Step 4: Rest, slice, snack
Rest 1 minute (stops cheese from oozing out), then cut into 3 wedges.
