Ultra-crispy gochujang-glazed chicken piled over rice with a punchy, crunchy quick wombok pickle—sweet, spicy, tangy, and wildly satisfying.
Step 1: Cook the rice
Rinse rice until water runs mostly clear. Cook using your preferred method (stovetop: 1 cup rice + 1½ cups water, bring to simmer, cover on low 12 minutes; rest off heat 10 minutes). Fluff and keep warm.
Step 2: Make the quick wombok pickle
In a bowl, whisk vinegar, sugar, salt, and gochugaru until dissolved. Add shredded wombok and toss well. Scrunch with your hands for 20–30 seconds to help it soften slightly and absorb flavour. Set aside while you cook (it will get juicier and more pickled).
Step 3: Mix the sticky sauce
In a small bowl, whisk gochujang, soy, honey, vinegar, sesame oil, and water until smooth. Set near the stove.
Step 4: Make the crisp batter
In a medium bowl, mix cornstarch, flour, salt, pepper, and baking powder. Pour in cold water and whisk just until smooth (a few tiny lumps are fine). Add chicken and toss to coat well.
Step 5: Heat the oil
Pour oil into a medium pot or deep skillet to a depth of about 2.5 cm / 1". Heat to **180°C / 350°F**. (No thermometer: a drop of batter should sizzle vigorously and float immediately.)
Step 6: Fry the chicken until deeply golden
Fry in 2–3 batches (don’t crowd). Drop pieces in one at a time, letting excess batter drip off. Fry **4–5 minutes**, turning as needed, until **crisp and deep golden**. Drain on a rack (best) or paper towels.
Step 7: Glaze (fast!)
In a large skillet over medium heat, add **1 tbsp oil**, then garlic (and ginger, if using). Stir until fragrant, **20–30 seconds**. Pour in sauce; simmer **1–2 minutes** until glossy and slightly thickened (it should coat a spoon). Add fried chicken and toss quickly to coat. Remove from heat once beautifully lacquered—don’t overcook or it can lose crisp.
Step 8: Build bowls
Divide rice between bowls. Pile on sticky crispy chicken, add a generous mound of quick wombok pickle (include some of its tangy juices), then finish with green onions and sesame seeds.
