Glossy milk chocolate bars filled with a rich pistachio cream and a crisp shredded pastry crunch—an indulgent, giftable treat that feels straight out of a luxury chocolatier.
Step 1: Prep the molds
Use 8 small chocolate bar molds (silicone is easiest) or one large mold and cut later. Ensure molds are completely dry (even a drop of water can seize chocolate). Set on a tray that fits in your fridge.
Step 2: Make the crunchy layer
Melt **25 g butter** in a skillet over medium heat. Add **kataifi** and toast, stirring constantly, until deeply golden and crisp, **5–7 minutes** (it should smell nutty, not raw). Sprinkle in **cardamom** (if using) and a pinch of salt. Cool completely—this is key for crunch.
Step 3: Mix the pistachio cream filling
In a bowl, stir together **pistachio butter**, **condensed milk**, **1/2 tsp salt**, and **vanilla** (if using) until thick and glossy. Fold in the cooled toasted kataifi. You’re aiming for a spreadable paste that holds its shape.

Spoon melted chocolate into molds (about 1–2 tbsp per cavity). Use the back of a spoon to push chocolate up the sides. Tap the tray firmly on the counter to release bubbles. Chill **8 minutes** until just set (not rock-hard).
Step 6: Fill
Spoon the pistachio-kataifi filling into each cavity, pressing gently so there are no gaps. Leave **3–4 mm** space at the top for the chocolate “lid.”
Step 7: Seal the bars
Re-melt the remaining **150 g** chocolate gently (add a teaspoon of neutral oil if it’s too thick, optional pantry staple). Pour/spoon over the filling to cover completely. Tap again to level.
Step 8: Set + unmold
Refrigerate **30–45 minutes** until fully set. Unmold carefully. Finish with a few **chopped pistachios** and a tiny pinch of **flaky salt** if you like.
Step 9: Easter upgrade (optional finishing touch)
Drizzle with a little extra melted chocolate and sprinkle pistachios to mimic an “Easter nest” vibe, or snap the bars into chunks and package in cellophane bags with ribbon for gifting.
