Step 1: Set up for success
Fill a wide pot with 6–7 cm / 2–3 inches of water. Bring to a gentle simmer over medium heat (you want small, lazy bubbles, not a rolling boil). Add **1 tbsp vinegar** and a pinch of salt.
Step 2: Toast the muffins
Toast **English muffins** until deeply golden (toaster or under grill/broiler). Keep warm on a tray in a low oven (about **90°C/200°F**) if needed.
Step 3: Sear the ham
Heat a skillet over medium-high. Add **oil or butter**, then sear **ham** 30–60 seconds per side until warmed through with a little browning. Transfer to a warm plate.
Step 4: Make quick blender hollandaise
