Juicy pan-seared chicken bathed in a glossy, garlicky coconut-lime sauce with a gentle ginger warmth and a silky finish.
Step 1: Prep the chicken
Pat chicken dry. Sprinkle both sides with salt, pepper, and cumin (if using). If breasts are very thick, slice horizontally into cutlets or pound to an even thickness (about 1.5–2cm / 2/3 inch) so they cook evenly and stay juicy.
Step 2: Sear until golden
Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until deep golden, about 4–5 minutes per side (timing depends on thickness). Transfer to a plate.
Step 3: Bloom the aromatics
Lower heat to medium. In the same skillet (don’t wipe it out), add garlic and ginger. Stir until fragrant, about 30–45 seconds. Don’t let the garlic brown; if it starts to catch, splash in a tablespoon of water.
Step 4: Build the coconut silk sauce
Pour in coconut milk, scraping up the golden bits from the pan. Add soy sauce, honey (if using), lime zest, and half the lime juice. Simmer gently (small bubbles, not a rapid boil) for 4–6 minutes, stirring now and then, until it looks slightly thicker and silky.
Step 5: Finish the chicken in the sauce
Return chicken (and any juices) to the skillet. Spoon sauce over the top. Simmer gently 4–6 minutes, or until chicken is cooked through (internal temp 165°F / 74°C) and the sauce coats the back of a spoon.
Step 6: Brighten and serve
Turn off heat. Taste sauce, then add remaining lime juice as needed for a fresh pop. Adjust salt/pepper and add chili flakes if you want heat. Rest 2 minutes, then serve with plenty of sauce spooned over.
