Pillowy steamed dumplings bathed in a buttery golden syrup sauce, served the classic way with melting vanilla ice cream.
Step 1: Make the golden syrup sauce
In a deep skillet or wide saucepan with a lid (about 26–28 cm / 10–11"), melt the butter over medium heat. Stir in golden syrup, brown sugar, water, and salt. Bring to a gentle simmer, stirring until the sugar dissolves and the sauce looks smooth and glossy (about 2–3 minutes).
Step 2: Mix dumpling dough (quickly!)
In a bowl, whisk together self-raising flour and caster sugar. Add melted/soft butter, milk, and vanilla (if using). Stir with a spoon just until no dry flour remains. The dough should be soft and scoopable; don’t overmix or the dumplings can turn tough.
Step 3: Portion the dumplings
Lower the sauce to a steady simmer (small bubbles, not a rolling boil). Using two dessert spoons (or a small cookie scoop), drop 8 dumplings (about 2 tbsp each) into the sauce, spacing them out— they will puff up.
Step 4: Steam in the sauce
Cover with a lid and cook for 15 minutes, maintaining a gentle simmer. Do not lift the lid during this time (steam is what cooks them through). You should hear quiet bubbling; if it’s too vigorous, turn the heat down.
Step 5: Check doneness & finish the sauce
After 15 minutes, lift the lid. The dumplings should be swollen and matte on top. Test one by inserting a skewer/toothpick into the centre— it should come out clean. Simmer uncovered for 2–3 minutes to slightly thicken the sauce. Stir in vanilla extract (if using).
Step 6: Serve retro-style
Spoon 2 dumplings into each bowl, ladle over plenty of golden syrup sauce, and top with a big scoop of vanilla ice cream. Serve immediately while the ice cream starts to melt into the sauce.
