Step 1: Salt the eggplant (for better texture)
Lay eggplant slices on a rack or paper towel-lined trays. Sprinkle both sides with the 1 tsp salt. Leave 20 minutes to “sweat,” then pat very dry (this helps them roast up tender and less oily).
Step 2: Roast the vegetables
Heat oven to **220°C / 425°F (200°C fan)**. Grease a large baking tray (or use two).
Step 3: Make the meat sauce
Heat a large pan over medium-high heat with a small drizzle of olive oil. Add onion and cook **5 minutes** until soft and sweet. Add garlic and cook **30 seconds** until fragrant.
Step 4: Make the béchamel
In a saucepan over medium heat, melt butter. Add flour and whisk constantly for **1–2 minutes** until it smells **toasty and biscuity** (but don’t let it brown).
Step 5: Assemble the moussaka
Grease a **23 x 33 cm / 9 x 13"** baking dish.
Step 6: Bake until golden
Bake at **180°C / 350°F** for **40–45 minutes**, until the top is **deep golden** and the edges are **bubbling**. If it browns too fast, loosely tent with foil.
Step 7: Rest, then slice
Rest **30 minutes** before cutting (important for clean layers). Slice into squares and serve warm.
