A crisp, light wafer stack coated in snappy chocolate for that classic “break” and melt-in-your-mouth crunch.
Step 1: Make the wafer dough
Heat oven to **170°C / 340°F (160°C fan)**. Line a **rimmed** baking tray (about **30 x 40cm / 12 x 16in**) with baking paper. In a bowl, whisk **flour, cornstarch, powdered sugar, salt, and baking powder**. Rub in the **cold butter** with fingertips (or pulse in a food processor) until it looks like fine crumbs. Add **egg and vanilla**, then mix just until it starts clumping. Add **milk 1 tbsp at a time** only until the dough holds together when pressed (it should be firm, not sticky).
Step 2: Roll thin and bake
Place dough between two sheets of baking paper and roll into a thin rectangle **about 2–3mm** thick. Peel off the top paper, transfer to the lined tray, and dock all over with a fork (helps it bake crisp). Bake **16–18 minutes** until **dry and lightly golden at the edges**. Cool completely on the tray (it crisps as it cools).
Step 3: Make the “KitKat-style” syrup glue
In a small saucepan, combine **granulated sugar, water, honey, and salt**. Bring to a boil over medium-high, then simmer **2–3 minutes** until slightly thickened and glossy (you’re aiming for a light syrup that will set, not caramel). Remove from heat and let cool **5 minutes** so it’s hot but not scalding.
Step 4: Cut and stack the wafers
Trim the baked wafer sheet into neat rectangles, about **3 x 9cm (1¼ x 3½in)** (or your preferred bar size). You’ll make **3-layer stacks**: brush a thin layer of warm syrup onto one wafer, press another wafer on top, brush again, then add the third wafer. Press gently but firmly so they adhere without cracking. Repeat to make **12 bars**. Refrigerate **20 minutes** to set.
Step 5: Seal and chill (key for crunch)
Brush a very thin coat of syrup over the outside of each stack (top/sides) to help the chocolate bond and to mimic that slightly “sealed” wafer bite. Chill again **20 minutes**.
Step 6: Melt the chocolate
Melt **milk chocolate** (and **oil**, if using) in a heatproof bowl in 20-second bursts in the microwave, stirring between, until smooth. Let it cool **2–3 minutes** so it’s fluid but not piping hot (hot chocolate can soften wafers).
Step 7: Coat the bars
Place bars on a rack set over a tray (or on baking paper). Spoon chocolate over each bar to fully coat, nudging chocolate along the sides. Tap the rack gently to smooth. For cleaner edges, you can scrape excess pooling with a small spatula.
Step 8: Set and serve
Let set at cool room temp **30–45 minutes**, or refrigerate **10–15 minutes** until firm. For the best “snap,” rest at room temp **10 minutes** before eating. Slice in half to get that classic break.
