Step 1: Season the chicken
Sprinkle chicken all over with salt and pepper. If using breasts, slice horizontally into 2 thinner cutlets for faster, juicier cooking.
Step 2: Sear until deeply golden
Heat a large skillet over medium-high heat. Add oil, then place chicken in a single layer. Sear until golden brown, about **4–5 minutes** on the first side. Flip and cook **3–4 minutes** on the second side (chicken should be just cooked through; thighs are forgiving, breasts should reach **165°F / 74°C**).
Step 3: Make the honey-garlic base
Reduce heat to medium. Push chicken to one side (or remove to a plate if your pan is crowded). Add butter. Once melted and foaming, add garlic and stir until fragrant, **30–45 seconds** (don’t let it brown).
Step 4: Build the sauce
Stir in honey, soy sauce, and vinegar. Let it bubble gently for **1–2 minutes**, stirring, until it smells caramel-y and the sauce darkens slightly.

Step 6: Coat the chicken
Return chicken (and any juices) to the skillet. Turn pieces in the sauce for **30–60 seconds** until thoroughly lacquered and sticky-shiny.
Step 7: Serve
Spoon extra sauce over the top. Finish with parsley/green onion if using. Serve hot.
