Step 1: Prep the pan
Line an 8-inch (20cm) square pan with baking paper, leaving overhang so you can lift it out later. Lightly oil the paper if needed to help it sit flat.
Step 2: Melt the chocolate base (glossy + intense)
Add the dark chocolate, milk chocolate, butter, golden syrup (or honey), and salt to a heatproof bowl.
Step 3: Cool slightly so marshmallows don’t vanish
Let the chocolate mixture stand for **3–5 minutes**. You want it still fluid but not piping hot (if it’s too hot, the marshmallows melt into streaks instead of staying chunky).
Step 4: Add the “everything” mix-ins
Stir in the biscuits, nuts, dried fruit (if using), and chocolate chips (if using). Fold until everything is thickly coated.
Step 5: Press and level (for clean slices)
Scrape into the prepared pan. Press down firmly with the back of a spoon or spatula to compact it (this helps it slice neatly instead of crumbling). Smooth the top.
Step 6: Chill until set
Refrigerate for **3 hours** (or overnight) until firm all the way through.
Step 7: Slice like a pro
Lift out using the paper overhang. Run a large knife under hot water, wipe dry, then slice into 16 squares. Re-warm and wipe the knife between cuts for the cleanest edges.
