Step 1: Season and flour the beef
Pat beef dry with paper towels (this helps browning). Toss with salt, pepper, and flour until evenly coated.
Step 2: Brown the beef (flavor foundation)
Heat oil in a large heavy pot (Dutch oven) over medium-high heat. Brown beef in 2–3 batches, 4–5 minutes per batch, turning to get deep golden crust. Transfer to a bowl. (Don’t crowd the pot—browning = flavor.)

Step 7: Final seasoning
