Chewy noodles tossed in a sweet-salty Korean-style sesame sauce with savory beef, finished with a runny-yolk fried egg for instant richness.
Step 1: Mix sauce
In a small bowl, whisk together soy sauce, brown sugar, sesame oil, vinegar, gochujang (if using), and black pepper until the sugar mostly dissolves. Set aside.
Step 2: Cook noodles
Bring a large pot of salted water to a boil. Cook noodles until just tender (about 1 minute less than package directions). Reserve 1/2 cup cooking water, then drain.
Step 3: Brown the beef
Heat 1 tbsp neutral oil in a large skillet or wok over high heat. Add beef and cook, breaking it up, until deeply browned in spots and no longer pink, 5–7 minutes. If there’s a lot of fat, spoon off excess, leaving about 1–2 tbsp in the pan for flavor.
Step 4: Bloom garlic + glaze
Reduce heat to medium. Add garlic and stir until fragrant, about 30 seconds. Pour in the sauce and simmer 1–2 minutes until glossy and slightly thickened.
Step 5: Toss noodles
Add drained noodles to the skillet and toss vigorously to coat. If it looks tight or dry, splash in reserved noodle water a tablespoon at a time until the noodles look saucy and slippery (usually 2–6 tbsp). Cook 30–60 seconds so the sauce clings.
Step 6: Fry eggs
In a nonstick skillet over medium-high heat, heat a thin layer of oil. Crack in eggs and fry until the whites are set and edges are crisp, 2–3 minutes. For a runnier yolk, stop there; for slightly set yolk, cover for 30–60 seconds.
Step 7: Serve
Divide noodles between bowls. Top each with a fried egg. Finish with scallions and sesame seeds (if using). Break the yolk and toss it through right before eating.
