Classic Italian baked lasagne with rich, slow-simmered meat ragù, creamy béchamel, and bubbly golden cheese layers.
Step 1: Build the ragù base
Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery with a pinch of salt. Cook, stirring, until soft and sweet (not browned), about 8–10 minutes. Add garlic and cook until fragrant, 30 seconds.
Step 2: Brown the meat properly
Increase heat to medium-high. Add the ground meat and break it up. Cook until you see browning on the bottom and most liquid has evaporated, 8–10 minutes. (This step is where big flavor comes from—don’t rush it.)
Step 3: Tomato + slow simmer
Stir in tomato paste and cook 1 minute. Add crushed tomatoes, stock (or water), milk, bay leaves, oregano (if using), salt and pepper. Bring to a gentle simmer, then reduce to low. Cook uncovered 60–75 minutes, stirring occasionally, until thick and rich—when you drag a spoon through, it should leave a trail that slowly fills in. Taste and adjust seasoning. Remove bay leaves.
Step 4: Make béchamel (lump-free)
Melt butter in a saucepan over medium heat. Add flour and whisk for 1–2 minutes until it smells slightly nutty (but stays pale). Gradually whisk in warm milk in splashes, smoothing out lumps as you go. Simmer gently, whisking, until thick enough to coat the back of a spoon, about 5–7 minutes. Season with salt, pepper, and nutmeg.
Step 5: Prep for layering
Preheat oven to **180°C / 350°F (160°C fan)**. Lightly oil a **33 x 23 cm / 13 x 9 in** baking dish. If using dried “no-boil” sheets, ensure your sauces are a bit looser (béchamel should pour; ragù should be saucy, not dry).
Step 6: Assemble the lasagne
Spread a thin layer of ragù on the base (prevents sticking). Layer in this order, repeating **4–5 layers**:

Cover loosely with foil (so it doesn’t stick to cheese). Bake **30 minutes**, then remove foil and bake **20–25 minutes** more until deep golden on top and bubbling around the edges. For extra browning, grill/broil 1–2 minutes—watch closely.
Step 8: Rest, then slice cleanly
Rest **20–30 minutes** before cutting. This sets the layers so you get neat slices instead of a lava slide.
