Golden pan-seared chicken in a bright, silky lemon-butter sauce studded with briny capers—fast, punchy, and restaurant-level delicious.
Step 1: Prep the chicken
Pat chicken cutlets dry (dry surface = better browning). Season both sides with salt and pepper. Spread flour on a plate and lightly dredge each cutlet, shaking off excess (you want a thin dusty coat, not a thick layer).
Step 2: Pan-sear until golden
Heat olive oil and **1 tbsp butter** in a large skillet over medium-high heat. When the butter is melted and foamy, add chicken in a single layer. Sear **2–3 minutes per side** until deeply golden and just cooked through (internal temp ~165°F/74°C). Transfer to a plate.
Step 3: Build the lemon-caper sauce
Reduce heat to medium. Add garlic and stir until fragrant, **about 20–30 seconds** (don’t let it brown). Pour in chicken broth and scrape up the browned bits from the pan (this is flavor). Simmer **2 minutes** to reduce slightly.
Step 4: Brighten and finish
Stir in lemon juice, lemon zest, and capers. Simmer **1–2 minutes** until the sauce smells bright and looks slightly glossy.
Step 5: Make it silky
Turn heat to low. Add remaining **2 tbsp butter** and swirl/shake the pan until melted and emulsified (sauce should look lightly thickened and shiny). Taste and adjust with a pinch of salt and extra pepper if needed.
Step 6: Return chicken to the sauce
Nestle chicken back into the skillet along with any resting juices. Spoon sauce over and warm **30–60 seconds**. Sprinkle with parsley (if using) and serve immediately.
