Juicy chicken simmered in a creamy, gently spiced mango curry sauce that’s sweet-savory, fragrant, and weeknight-friendly.
Step 1: Sear the chicken
Pat chicken dry (better browning). Heat oil in a large skillet or pot over medium-high heat. Add chicken and sprinkle with 1/2 tsp salt and pepper. Sear for 3–4 minutes, turning to get some golden patches (it doesn’t need to cook through). Remove to a bowl.
Step 2: Build the flavour base
Lower heat to medium. Add onion to the same pan and cook 4–5 minutes until soft and lightly golden, scraping up browned bits. Add garlic and ginger; cook 30 seconds until fragrant.
Step 3: Bloom the spices
Add curry powder, cumin, turmeric, and chili flakes. Stir constantly for 45–60 seconds until the spices smell toasted and the pan looks slightly dry (this wakes up the flavour).
Step 4: Simmer the sauce
Pour in coconut milk and stir well to dissolve the spices. Add diced mango (reserve a small handful for garnish if you like). Bring to a gentle simmer.
Step 5: Cook chicken in the curry
Return chicken (and any juices) to the pan. Simmer gently for 8–10 minutes, stirring occasionally, until chicken is cooked through and the sauce thickens to a creamy consistency. If it gets too thick, loosen with a splash of water.
Step 6: Finish and balance
Turn off heat. Stir in lime/lemon juice. Taste and adjust: add remaining 1/2 tsp salt (or as needed), a touch of sugar/honey if you want it sweeter, or extra lime if it needs brightness. Rest 2 minutes (sauce thickens slightly).
Step 7: Serve
Spoon into bowls and top with a few mango cubes if reserved. Serve hot.
