Step 1: Season the steaks
Pat steaks very dry with paper towels (this is key for a great crust). Season all over with salt, pepper, cumin, paprika, oregano, and a pinch of chili/cayenne if using. Rub in well, including the sides. Let sit 5 minutes while you heat the pan.
Step 2: Sear hard for a crust
Heat a heavy skillet (cast iron ideal) over high heat until very hot—when you flick in a drop of water it should sizzle and vanish. Add oil, swirl, then lay in steaks. Sear **2 minutes** on the first side without moving, until deeply browned.
