Fork-tender, warmly spiced lamb in a rich tomato-onion sauce spooned over steaming couscous, finished with bright lemon and herbs.
Step 1: Brown the lamb
Pat lamb dry (this helps it brown). Season with salt and pepper. Heat 1 tbsp oil in a large heavy pot (Dutch oven ideal) over medium-high heat. Brown lamb in 2 batches, 4–5 minutes per batch, turning until deep golden on multiple sides. Transfer to a plate.
Step 2: Build the flavor base
Reduce heat to medium. Add remaining 1 tbsp oil and the onion. Cook 6–8 minutes, stirring, until soft and lightly golden. Add garlic and cook 30 seconds until fragrant.
Step 3: Toast the spices
Add cumin, coriander, paprika, cinnamon, ginger, and cayenne. Stir constantly for 45–60 seconds until the spices smell warm and fragrant (don’t let them scorch).
Step 4: Make the sauce
Stir in tomato paste for 1 minute to caramelize slightly. Add crushed tomatoes, stock, and honey. Scrape the bottom of the pot to dissolve browned bits (big flavor).
Step 5: Braise until tender
Return lamb and any juices to the pot. Bring to a gentle simmer, then cover with a lid slightly ajar. Cook on low for 1 hour, stirring every 20 minutes, keeping it at a lazy bubble (too hard = tough lamb).
Step 6: Add vegetables & chickpeas
Stir in carrot and chickpeas. Cover again and cook 35–45 minutes until lamb is fork-tender and the sauce is thick enough to coat a spoon. If the sauce reduces too fast, add a splash of water; if it’s thin, simmer uncovered 5–10 minutes.
Step 7: Finish like a tagine
Stir in preserved lemon (or lemon zest + juice) and cilantro. Taste and adjust salt, pepper, and lemon for brightness. Rest 10 minutes off the heat for best texture and flavor.
Step 8: Fluff the couscous
Put couscous in a bowl. Pour over boiling water/stock, add salt and oil/butter, stir once, then cover tightly (plate or cling film). Stand 5 minutes, then fluff with a fork until light and separate.
Step 9: Serve
Mound couscous onto plates, spoon lamb and plenty of sauce over the top, and finish with extra herbs (and an extra squeeze of lemon if you like).
