Step 1: Heat the oven
Preheat oven to **220°C / 430°F (200°C fan)**. Line a tray with baking paper (easier cleanup).
Step 2: Season the beef
Toss sliced beef with **oil, cumin, paprika, oregano, chilli powder, salt, and pepper**. Rub well so every piece is coated.
Step 3: Sear hard and fast
Heat a large skillet on **high** until very hot. Add beef in a single layer (cook in batches if needed). Sear **60–90 seconds per side** until browned with a little char but still juicy. Rest 2 minutes, then roughly chop if pieces are long.
Step 4: Build the nachos (two-layer method)
