An elevated Indonesian fried rice with deeply caramelised kecap, silky scrambled egg ribbons, and a crisp-edged, golden “crown” of rice for restaurant-level texture.
Step 1: Prep for “wok hei” style frying
Break up the cold rice with wet fingers so it’s loose and not clumpy. Pat prawns dry (this helps them sear instead of steaming). Mix sauce in a small bowl: **kecap manis + soy sauce + lime juice**.
Step 2: Silky egg ribbons
Heat **1 tsp oil** in a wok or large skillet over medium heat. Beat eggs with a pinch of salt and white pepper, then pour in. Stir gently with a spatula to create soft curds, cooking just until *barely set* (about 45–60 seconds). Remove to a plate—this keeps the eggs tender and “luxury,” not dry.
Step 3: Sear prawns for sweetness
Increase heat to high. Add **1 tbsp oil**, then prawns in a single layer. Sear 45–60 seconds per side until just pink and lightly golden at the edges. Remove immediately (overcooked prawns go rubbery).
Step 4: Build the aromatics
Add remaining **1 tbsp oil**. Fry shallots for 1–2 minutes until lightly golden and starting to crisp at the edges. Add garlic (and chilli, if using) and stir until fragrant, about 20–30 seconds.
Step 5: Caramelise the rice (the luxury trick)
Add rice and press it into the pan in an even layer. Let it sit **undisturbed 45–60 seconds** until you hear a faint crackle and smell toasted rice. Toss, then press again. Repeat 2–3 cycles—this creates crisp, golden bits without drying the whole dish.
Step 6: Gloss with kecap and finish
Pour in the sauce around the edges of the pan (it will sizzle and caramelise), then toss thoroughly until rice is evenly bronze and glossy, about 1 minute. Return prawns and eggs, add spring onions, and toss for 20–30 seconds to warm through. Taste and adjust with a pinch of salt/pepper (kecap is sweet, soy is salty—go slowly).
Step 7: Serve like a restaurant
Mound onto plates, scattering any crisp shallot bits from the pan over the top. Serve immediately with **lime wedges** for a bright squeeze right at the table.
