A rich, gently spiced Northern Thai curry with fork-tender beef simmered in aromatics until the sauce turns glossy, savory-sweet, and deeply fragrant.
Step 1: Sear the beef
Pat beef dry (this helps browning). Heat oil in a heavy pot/Dutch oven over medium-high heat. Sear beef in 2 batches until well-browned on 2–3 sides, about 6–8 minutes per batch. Transfer to a bowl.
Step 2: Build the curry base
Lower heat to medium. Add garlic and ginger; stir until fragrant, about 30 seconds. Add red curry paste, turmeric, coriander, cumin, and cinnamon. Fry the paste, stirring constantly, until it darkens slightly and smells “toasted,” about 2 minutes (add a splash of water if it threatens to stick).
Step 3: Simmer until tender
Return beef (and any juices) to the pot. Add water, tamarind, fish sauce, palm sugar, soy sauce, and vinegar. Stir well, scraping the bottom. Bring to a gentle simmer, then reduce heat to low, cover, and cook 1 hour 30 minutes, stirring every 20–30 minutes.
Step 4: Add onions + reduce glossy
Add onion wedges. Continue simmering uncovered for 30–40 minutes, stirring occasionally, until beef is fork-tender and the sauce is thick and glossy enough to coat a spoon. If it reduces too quickly before the beef is tender, add water 1/4 cup at a time.
Step 5: Finish and balance
Stir in crushed peanuts (if using) and simmer 2 minutes. Taste and adjust:
