Step 1: Prep the oven
Heat oven to **120°C / 250°F (100°C fan)**. Line a baking tray with baking paper.
Step 2: Whip the meringue
In a clean, dry bowl, whisk **egg whites + pinch of salt** until **soft peaks** form (peaks flop over). Gradually add the **sugar** 1 tablespoon at a time while whisking, until the meringue is **glossy, thick**, and you can rub a little between your fingers and feel **no sugar grit** (about **6–8 minutes** with a stand mixer).
Step 3: Bake until crisp
Spoon 6–8 mounds onto the tray (rustic is perfect). Bake for **1 hour 30 minutes**, until the outside is **dry and crisp**. Turn the oven off and let cool inside with the door slightly ajar for **20–30 minutes** (helps prevent cracking).
Step 4: Macerate the strawberries

Step 7: Serve
