Step 1: Dry and season the duck
Pat the duck very dry with paper towels (dry skin = crispy skin). In a small bowl mix salt, five-spice, and baking powder. Rub all over the skin (avoid getting too much inside the cavity). Place the duck breast-side up on a rack over a roasting tray (or on scrunched foil “rails” if you don’t have a rack). Step 5: Assemble and serve
