Step 1: Dry the rind (the secret to bubbles)
Pat the pork skin very dry with paper towels. If you have time, place it skin-side up on a rack over a tray and refrigerate uncovered overnight (or at least 4 hours). This dries the surface so it blisters instead of going chewy.
Step 2: Score for maximum crackle
If the skin isn’t already scored, use a sharp knife to cut shallow lines about 1 cm / 1/2 in apart, **cutting through the skin but not deeply into the fat**. Turn and score the other direction if you want extra-small crackle shards.
Step 3: Salt and oil
Rub the skin all over with oil, then sprinkle evenly with salt, working it into the score lines. (Pepper can burn at high heat; add after baking if you prefer.)
Step 4: Slow render (dries + melts fat)
Heat oven to **160°C / 320°F (140°C fan)**. Place rind pieces on a rack over a tray (or directly on a tray lined with foil). Bake **30 minutes** to start drying and rendering. You’ll see fat begin to melt and the surface look drier.
Step 5: Blast for blistering
Increase oven to **240°C / 465°F (220°C fan)**. Bake **15–25 minutes**, rotating the tray halfway, until the skin is **deep golden, puffed, and audibly crisp**. If some spots lag behind, move pieces around and give them another 3–5 minutes—watch closely at the end as it can go from perfect to burnt quickly.
Step 6: Cool to set the crunch
Remove and let cool **10 minutes** (it crisps further as it cools). Break into shards. Sprinkle a pinch more salt if needed.
