Step 1: Make the piri-piri-style marinade
In a bowl, mix olive oil, garlic, smoked paprika, oregano, cumin, chili flakes, salt, pepper, lemon zest, lemon juice, vinegar, and honey (if using). It should look like a brick-red paste/sauce.
Step 2: Marinate the chicken
Place chicken quarters on a tray. Rub marinade thoroughly all over, including under any loose skin where possible (this drives flavour into the meat). Marinate **at least 30 minutes** at room temp, or **up to 24 hours** covered in the fridge (best).
Step 3: Roast the chicken (party-friendly, hands-off)

In a large pot or deep sauté pan over medium heat, cook diced chorizo **3–4 minutes** until it releases oil and browns. Add onion and cook **3 minutes** until softened. Add bell peppers and cook **4–5 minutes** until sweet and slightly softened. Stir in garlic (1 clove from your pantry is fine if you want extra) for **30 seconds** until fragrant.
Step 7: Toast orzo, then simmer
Add tomato paste and cook **1 minute** to caramelise. Stir in orzo and toast **1 minute** (it’ll turn glossy). Pour in stock, add 1/2 tsp salt and black pepper. Bring to a lively simmer, then reduce to medium-low and cook **9–11 minutes**, stirring frequently, until the orzo is tender and saucy (add a splash of water if it tightens too much).
Step 8: Finish the orzo
Turn off heat. Stir through parsley. Taste and adjust salt, pepper, and a small squeeze of lemon if you want it brighter. Cover to keep warm.
Step 9: Dress the rocket salad (last minute)
In a bowl, whisk lemon juice, olive oil, salt, and pepper. Toss rocket and sliced red onion through dressing right before serving so it stays perky.
Step 10: Serve party-style
