Slippery noodles and juicy beef tossed in a creamy, fragrant satay sauce with a punch of lime and a shower of crunchy toppings.
Step 1: Soften the noodles
Cook rice noodles according to packet directions until just tender (don’t overcook; they’ll soften more when tossed). Drain, rinse briefly under cool water, then toss with a small drizzle of oil to prevent sticking.
Step 2: Mix the satay sauce
In a bowl, whisk together peanut butter, coconut milk, soy sauce, brown sugar, vinegar (or lime juice), curry powder, paprika, chili flakes (if using), and hot water. You want it **pourable but still creamy**—add an extra splash of hot water if needed. Taste and adjust: more soy for saltiness, sugar for balance, vinegar for brightness.
Step 3: Sear the beef fast
Heat a large skillet on high heat until hot. Add 1 tbsp oil. Season beef lightly with salt and pepper. Spread beef out in the pan and sear **45–60 seconds** per side (do this in 2 batches if needed so it browns instead of steams). Transfer to a plate.
Step 4: Fragrance the pan
Reduce heat to medium. Add a touch more oil if the pan is dry, then cook garlic for **20–30 seconds** until fragrant (don’t let it brown).
Step 5: Gloss the beef in satay
Pour the satay sauce into the skillet and simmer **30–60 seconds** until glossy and warmed through. Return beef (and any juices) to the pan and toss for **30 seconds**—just to coat and finish cooking. If it thickens too much, loosen with a splash of hot water.
Step 6: Assemble the bowls
Divide noodles between bowls. Add cabbage and carrot alongside. Spoon over the satay beef and plenty of sauce.
Step 7: Finish & serve
Top with green onion and chopped peanuts. Serve immediately while the sauce is warm and the veg is crisp.
