Fork-tender beef in a bold, tangy, chilli-forward Goan-style curry, slow-simmered until the sauce turns dark, glossy, and intensely savoury.
Step 1: Season & prep
Pat beef dry. Toss with 1 tsp salt and the black pepper. This helps it brown properly and builds flavour in the pot.
Step 2: Brown the beef
Heat oil in a heavy pot or Dutch oven over medium-high heat. Brown beef in 2–3 batches (don’t crowd), about 4–6 minutes per batch, until well browned on multiple sides. Transfer to a bowl.
Step 3: Build the base
Reduce heat to medium. Add onions with a pinch of salt and cook, stirring regularly, until deep golden, 10–12 minutes (this colour is key for a darker, richer vindaloo). Add garlic and ginger; cook until fragrant, 1 minute.
Step 4: Toast spices
Add paprika, chilli powder, cumin, coriander, turmeric, cinnamon, cloves, and cardamom. Stir constantly for 45–60 seconds until the spices smell toasty and the pot looks slightly dry (don’t let it burn).
Step 5: Deglaze & form the sauce
Pour in vinegar and scrape the browned bits off the bottom (that’s flavour). Stir in crushed tomatoes, remaining 1 tsp salt, and 1 1/2 cups water.
Step 6: Slow cook
Return beef (and any juices) to the pot. Bring to a simmer, then cover with lid slightly ajar. Cook on low heat for 2 hours 30 minutes to 3 hours, stirring every 30–40 minutes, until the beef is very tender and the sauce is thick and dark.
Step 7: Finish & balance
Stir in brown sugar (if using). Taste and adjust: more salt for savoury depth, more vinegar (1–2 tsp at a time) for punch, and more chilli for heat. Let it rest off the heat 10 minutes—flavour improves as it settles.
Step 8: Serve
Serve hot with steamed rice (or flatbreads) and something cooling on the side if you like (plain yogurt works if you have it).
