Fork-tender beef simmered low and slow in a deeply aromatic coconut-spice sauce until rich, glossy, and intensely savory.
Step 1: Blend the spice paste
In a blender or food processor, combine onion, garlic, ginger, lemongrass, sambal oelek, tomato paste, ground coriander, cumin, turmeric, paprika, salt, and pepper. Blitz into a thick paste (it doesn’t need to be perfectly smooth). Scrape down the sides as needed.
Step 2: Brown the beef (big flavor step)
Heat oil in a large skillet over high heat. Working in batches, sear beef chunks for 2–3 minutes per side until deeply browned (don’t cook through). Transfer to the slow cooker.
Step 3: Cook the paste until fragrant
In the same skillet (no need to clean), add the spice paste. Cook over medium-high heat, stirring often, until it darkens slightly and smells intensely fragrant, about 3–4 minutes.

Scrape the cooked paste into the slow cooker over the beef. Add coconut milk, brown sugar, soy sauce, fish sauce (if using), cinnamon stick, cloves (if using), and kaffir lime leaves (if using). Stir well to coat the beef.

Transfer the cooked mixture to a wide pot or deep skillet (this reduces faster than the slow cooker). Simmer uncovered over medium heat for 20–35 minutes, stirring regularly, until the sauce thickens dramatically and coats the beef in a glossy, dark, clingy layer.
Step 7: Finish and serve
Turn off heat. Stir in lime juice (and lime zest if you didn’t use lime leaves). Taste and adjust salt, sweetness, and heat. Rest 10 minutes (the sauce clings even better), then serve.
