A fall-apart tender lamb shoulder with a crisp, deeply browned crust and a rich pan sauce made right in the roasting tray.
Step 1: Heat oven & prep the tray
Preheat oven to **325°F / 165°C** (150°C fan). Place onion wedges in the middle of a roasting pan or deep baking dish to form a “rack” for the lamb. Pour in **2 cups water** (this prevents burning drippings and becomes the base of the sauce).
Step 2: Make the garlic-rosemary rub
In a small bowl, mix **salt, pepper, olive oil, garlic, rosemary, cumin (if using), paprika, lemon zest and lemon juice** into a paste.
Step 3: Season the lamb
Pat lamb dry with paper towels (key for browning later). Rub the paste all over the lamb, working it into crevices. Place lamb on top of the onions, fat side up.
Step 4: Slow roast (covered)
Cover tightly with foil (or a lid). Roast for **3 hours**, turning the pan once halfway through. It’s ready for the next step when the meat looks visibly relaxed and a fork slides in with little resistance.
Step 5: Brown & crisp (uncovered)
Remove foil. Increase oven to **450°F / 230°C** (210°C fan). Roast uncovered for **20–30 minutes** until the surface is **deeply browned with crisp edges**. If you want extra color fast, place it higher in the oven for the last 5–10 minutes (watch closely).
Step 6: Rest the lamb
Transfer lamb to a board and loosely tent with foil. Rest **20 minutes** (juices redistribute; it will stay hot).
Step 7: Make the pan sauce
Skim excess fat from the pan juices (leave a little for flavor). Mash the onions into the liquid for body, then place the roasting pan on the stove over medium heat (or pour into a saucepan). Simmer **5–8 minutes** until slightly reduced and glossy. Taste and adjust with extra salt/pepper if needed.
Step 8: Serve
Pull or slice the lamb (it should shred easily). Spoon over the pan sauce and serve hot.
