Step 1: Marinate the chicken
In a large bowl, mix buttermilk, hot sauce, and 1 1/4 tsp salt. Add chicken and toss well. Cover and refrigerate at least 4 hours (overnight is even better). The chicken should look slightly “tightened” and seasoned when you lift it out.
Step 2: Make the spicy “KFC-style” dredge
In a shallow dish, combine flour, cornstarch, paprika, cayenne, garlic powder, onion powder, oregano, thyme, black pepper, and remaining 1 tsp salt. Whisk well so the spices are evenly distributed.
Step 3: Create the craggy crust (the trick!)
Remove chicken from marinade, letting excess drip back into the bowl. Dredge each piece firmly in the flour mix, pressing hard to make it stick.
Step 4: Rest the coating
Place breaded chicken on a wire rack (or a plate) for 10–15 minutes. The coating will hydrate slightly and cling better—less chance of it falling off in the fryer.
Step 5: Fry at the right temperature
Heat 1 1/2–2 inches of oil in a heavy pot to **325°F (163°C)**. Fry in batches (don’t crowd the pot).
Step 6: Finish to safety + peak juiciness
Chicken is done when the thickest piece hits **165°F (74°C)** at the bone. If it’s browning too fast before cooking through, keep oil closer to **315–320°F** and fry a bit longer.
Step 7: Drain and season
Drain on a wire rack. While hot, sprinkle a light pinch of salt for that fast-food punch. Rest 5 minutes before serving so juices settle.
