Golden, flaky pastry encases tender beef in a rich, glossy ale gravy — pure English pub comfort made at home.
Step 1: Season & coat the beef
Pat beef dry (this helps it brown). Toss with salt, pepper, and 3 tbsp flour until lightly dusted.
Step 2: Brown the beef (don’t rush this!)
Heat 2 tbsp oil in a large heavy pot over medium-high heat. Brown beef in 3 batches, 4–6 minutes per batch, until deep brown crust forms. Add a splash more oil if the pot looks dry. Transfer browned beef to a bowl.
Step 3: Build the flavour base
Reduce heat to medium. Add onions, carrots, and celery with a pinch of salt. Cook 8–10 minutes, scraping the browned bits off the bottom, until the onions are soft and starting to go golden. Add garlic and cook 30 seconds until fragrant.
Step 4: Tomato paste “fry” + deglaze
Stir in tomato paste and cook 1 minute (it should darken slightly). Pour in the ale and Worcestershire, stirring well to dissolve everything stuck to the pot. Simmer 2–3 minutes to take the raw edge off the beer.
Step 5: Slow-braise until spoon-tender
Return beef (and any juices) to the pot. Add stock, bay leaves, and thyme. Bring to a gentle simmer, then cover with a lid slightly ajar. Cook 1 hour 30 minutes, stirring every now and then, keeping it at a low bubble.
Step 6: Add mushrooms + thicken to pie-gravy
Stir in mushrooms (if using). Simmer uncovered 20–30 minutes until the beef is very tender and the sauce is thick and glossy. If it’s still thin, mix 1 tbsp flour with 2 tbsp cold water and stir in; simmer 2 minutes until it coats the back of a spoon. Taste and adjust salt/pepper.
Step 7: Assemble the pie
Heat oven to **200°C / 390°F (180°C fan)**. Spoon filling into a 2–2.5 L pie dish. Lay puff pastry over the top, trim edges, and press to seal. Cut 2–3 small slits in the center for steam. Brush generously with beaten egg.
Step 8: Bake until deeply golden
Bake **30–35 minutes** until puffed and a deep golden brown. Rest **10 minutes** before serving so the gravy settles.
